We mill Coppola Colline Salernitane Extra Virgin Olive Oil from olives grown in the hills around the city of Salerno in Campania. Colline Salernitane is a PDO (protected denomination of origin) olive oil. We made it with at least 65% Rotondella, Frantoio, Carapellese, and Nostrale olive varieties. The remaining portion of this olive oil comes from Ogliarola, Leccino, and other locally grown cultivars. Coppola Colline Salernitane Extra Virgin Olive Oil has a color range from yellow to green. It carries a clear bitter note in its flavor profile. However, connoisseurs prize this extra virgin olive oil when it is young, before it undergoes any flavor changes. It offers a fruity green aroma that evokes cut-grass and green tomatoes.
We recommend it on fresh salads, grilled fish, in vegetable soups and pasta dishes.
