COOKING TIME: 2 hours
1kg chicken thighs / legs
2 x 400g of COPPOLA Pomodorini (Cherry Tomatoes)
1 tablespoon COPPOLA Extra Virgin Olive Oil
1 bay leaf
1 sprig of fresh rosemary
• Preheat oven to 200 degrees (180 if using a fan assisted oven).
• Dice potatoes into medium cubes. Chop the onion.
• In a ceramic casserole drizzle a bit of extra virgin olive oil and place chicken legs. Sprinkle with sea salt and black pepper to taste. Add rosemary and bay leaf. On top of the chicken place half of cherry tomatoes, followed by potato and onion. Finally, add the remaining cherry tomatoes and make sure tomato sauce is covering all ingredients.
• Place in the oven for 90 minutes. When the top of your dish gets brown – it is ready!
