Ingredients
1 x 400g tin of COPPOLA Polpa + Herbs (Chopped Tomatoes with Herbs)
1 small onion
3 cloves of garlic
1 red chilli
COPPOLA Extra Virgin Olive Oil
Zest from 1 lemon
Premium quality bread
200g soft goat cheese
Sea salt, to season
Black pepper, to season
2 sprigs of fresh thyme
Method
• Prepare tomato topping: heat extra virgin olive oil and add chopped onion and garlic, sliced chili and then mix with Polpa+ Herbs and lemon. Season with sea salt and black pepper.
• Toast the slices of bread. Spread tomato mixture on bread, crumble goat cheese on top and sprinkle with fresh thyme.
