Judge’s commented: “A vibrant sauce with even sized pieces of tomato and olives. A delcious no added sugar sauce, but would benefit from a reduction in acitiy and more depth of flavour, maybe add a glug of olive oil and more anchovies” and “Good colour, good size pieces and healthy looking olives all of which have kept their colours. The flavours are good, there is a rich tomato with natural sweetness and only the merest hint of the familiar back notes from an industrial made sauce. We would be happy to use this”.
