Judge’s comments: “Thick and chunky, this sauce is packed full of sundried tomatoes with a soft, melt-in-your-mouth texture. The flavour of the herbs, cheese and garlic give a wonderful added depth to the already umami rich tomatoes. The tomatoes have a good bite and the oil seems very light.”
Our Pesto Siciliano recipe features crushed Italian sundried tomatoes, garlic, extra virgin olive oil, pine nuts, and cheese. The name “pesto” itself reflects the traditional method of preparation, which involved crushing or grinding the ingredients in a marble mortar with a circular motion using a wooden pestle.
