Fontana FORMIELLO Fregula Sarda is a special variety of Sardinian pasta.
It stands out for the nutty flavour and the distinctive golden hue.
After cooking, it has a delicious “al dente” texture.
These tiny round shapes are beautiful in:
- meat-based soups
- seafood dishes with clams and shrimps.
Our Fontana FORMIELLO Fregula Sarda is made by shaping high quality durum wheat semolina and water through bronze dies, slow-drying it, and lightly toasting it.
This traditional process gives fregula its light brown colour and tasty flavour.
- Origins: Known as Arabic couscous, explorers from North Africa introduced Fregula to Sardinia, and it became a part of the local cuisine.
- Good to know:You can cook Fregula in boiling water like traditional pasta and toss it with a sauce. Alternatively, you can also prepare it like risotto by cooking it in the recipe’s broth.
Drain the fregula thoroughly after cooking in boiling water, then transfer it to a bowl and sprinkle a few drops of olive oil over it.
Toss the fregula to coat evenly and prevent the beads from sticking together as they cool.
