These beans have an earthy aroma and are a favourite in Italy where they’re used in pasta e fagioli (pasta with beans).
They are excellent when cooked with aromatic herbs like rosemary, sage or basil, and make a great addition to tomato-based stews. You can use Borlotti beans in risotto, casseroles and soup.
Try it also in Mexican recipes such as refried beans.
