Fontana FORMIELLO Trofie Pasta is a regional pasta variety. It is traditionally from the area between Genova and Portofino on the Ligurian coast in northwest Italy.

The name of this pasta is believed to derive from the Genovese dialect word “strufuggia” which means “to rub” and refers to the process of making trofie.

Fontana FORMIELLO Trofie Pasta is a twisted, spindle-shaped pasta.

Originally, people prepare it by rolling a small piece of dough on a flat surface to form short round spirals with tapered ends.

Our Trofie are:

  • slow dried at low temperature.

Good to know:Traditionally, people cook trofie with green beans and potatoes and serve it with basil pesto.
