The name “trofie” comes from the Genovese dialect “strufuggia,” meaning “to rub,” referring to the pasta-making technique.
Trofie is a twisted, spindle-shaped pasta.
Originally, producers prepared trofie by rolling a small piece of dough on a flat surface to form short round spirals with tapered ends.
