It is traditionally from the area between Genova and Portofino on the Ligurian coast in northwest Italy.

The name “trofie” comes from the Genovese dialect “strufuggia,” meaning “to rub,” referring to the pasta-making technique.

Trofie is a twisted, spindle-shaped pasta.

Originally, producers prepared trofie by rolling a small piece of dough on a flat surface to form short round spirals with tapered ends.
