Millet has been farmed for over a thousand years; in Italy it was widely used at the time of Romans and during the Middle Ages when it was considered an excellent substitute for meat.

Fontana FORMIELLO Millet Miglio is grown in northern Italy in the foothills of the Alps.

Good to know: Lightly toast millet before cooking to enhance the earthy, nutty flavour. Toss in salads or add to omelettes. Boil in milk instead of water and add some maple syrup and fruit for a tasty porridge.

Pop millet like popcorn, place a small amount in a dry skillet and shake the pan until you see a slight change in the colour and shape. Popped millet is smaller than popcorn and can be used also in place of breadcrumb coatings.
